& BAKING COURSE
(Module 1 to 4)
INTRODUCTION

The aim of the course is to provide basic knowledge and skills for the
participant to perform the job of an assistant baker. |

COURSE CONTENT |
Comprises of 4 modules: Module 1: Introduction to Baking Science Set-up for
pastry and baking. Prepare a rage of gluten, emulsion,
fermented milk products and apply basic first aid knowledge. Module 2: Pastry Basics Learn
techniques to bake variety of pastries (e.g. choux & puff pastry) and
evaluate products. Module 3: Cake Mixing and Baking Learn
techniques to bake variety of cakes (e.g. tea, cheese and mousse cakes);
decorate and evaluate products. Module 4: Bread Production Learn
techniques on preparing doughs; processing, baking
and evaluating bread products. |

CDAC SKILLS
TRAINING AWARD SCHEME
Award holders must achieve at least 75% attendance and sit for all
exams. Those who failed to do so would have to refund the sponsored amount of
$4802. CDAC sponsorship is only for the course
fees. Trainees must bear
additional cost for miscellaneous fees (registration fees, examination fee, uniform,
tools, textbooks etc) at approximately $980 (not inclusive of GST). |
